Sadya Special Avial : വിവിധതരം പച്ചക്കറികളും കട്ടിത്തൈരും തേങ്ങയും ചേർത്തുണ്ടാക്കുന്ന ഒരു കേരളീയ വിഭവമാണ് അവിയൽ. കേരളീയ സദ്യയിലെ ഒഴിച്ചുകൂടാനാവാത്ത ഒരു പ്രധാന കറി ആണിത്. സാധാരണയായി അവിയലിൽ ചേർക്കുന്ന പച്ചക്കറികൾ നേന്ത്രക്കായ, ചേന, പയർ, പടവലങ്ങ, വെള്ളരിക്ക, മുരിങ്ങക്ക, കാരറ്റ്, വാഴക്ക, കുമ്പളങ്ങ, മത്തങ്ങ, കയ്പക്ക, ബീൻസ്, പച്ചമുളക് എന്നിവയാണ്. വെളിച്ചെണ്ണയും കറിവേപ്പിലയും ചേർത്തുണ്ടാക്കുന്ന ഈ വിഭവം പോഷകസമ്പുഷ്ടമാണ്.
Sadya Special Avial Ingredients:
- Elephant yam – 1 piece
- Kaya (Nendrakai) – 2 pieces
- Kumbalanga – 1 piece
- Achinga (Padavalanga) – 1 handful
- Carrot – 2 pieces
- Beans/Achinga dal – 1 handful
- Drumstick – 1 large
- Spinach stalk – 1 handful (optional)
- Turmeric powder – 1/2 teaspoon
- Chili powder – 1/2 teaspoon
- Salt – to taste
- Green chilies – 6 pieces
- Jumin seeds – 1 teaspoon
- Coconut (grated) – 1/2 piece
- Curd (sour) – 1/2 cup
- Curd leaves – 3 stalks
- Green gram oil – 3 tablespoons
- Water – as needed
എല്ലാ പച്ചക്കറികളും നീളത്തിൽ കട്ട് ചെയ്ത് വൃത്തിയാക്കി വെക്കുക. ഒരു പാത്രത്തിൽ പച്ചക്കറികൾ, മഞ്ഞൾപ്പൊടി, മുളകുപൊടി, ഉപ്പ്, 2 ടേബിൾസ്പൂൺ വെളിച്ചെണ്ണ, കറിവേപ്പില എന്നിവ ചേർത്ത് നന്നായി മിക്സ് ചെയ്യുക. ഇതിലേക്ക് ആവശ്യത്തിന് വെള്ളം (പച്ചക്കറികൾ മൂടുന്ന അളവിൽ) ചേർത്ത് അടച്ചുവെച്ച് വേവിക്കുക. വെള്ളം ചേർത്ത ശേഷം ഇളക്കരുത്. പച്ചമുളക്, ജീരകം, ചിരണ്ടിയ തേങ്ങ, കുറച്ച് കറിവേപ്പില എന്നിവ മിക്സിയിൽ അരച്ചു വെക്കുക (പേസ്റ്റ് ആകാതെ ചമ്മന്തി പരുവത്തിൽ). പച്ചക്കറികൾ വെന്തു കഴിഞ്ഞാൽ ഈ അരച്ച Mischung ചേർത്ത് നന്നായി മിക്സ് ചെയ്യുക.
അടുത്തതായി തൈര് ചേർത്ത് ഇളക്കുക. ശേഷം 1 ടേബിൾസ്പൂൺ പച്ചവെളിച്ചെണ്ണ, കറിവേപ്പില എന്നിവ ചേർത്ത് സ്റ്റൗ ഓഫ് ചെയ്യുക. വിറ്റാമിനുകൾ, ധാതുക്കൾ, നാരുകൾ, പ്രോട്ടീൻ എന്നിവയാൽ സമ്പുഷ്ടമായ അവിയൽ ആരോഗ്യകരമായ ഒരു ഭക്ഷണമാണ്. പാചകശാലയിൽ കറിക്ക് അരിഞ്ഞു കൂട്ടിയ പച്ചക്കറികളുടെ അവശിഷ്ടങ്ങൾ ഉപയോഗിച്ചാണ് ഇരയിമ്മൻ തമ്പി അവിയൽ കണ്ടെത്തിയതെന്നു പറയപ്പെടുന്നു. ചോറിന്റെ കൂടെയോ പ്രധാന പ്രാതൽ വിഭവങ്ങളുടെ കൂടെയോ അവിയൽ ഭക്ഷിക്കാം. കേരളത്തിനു പുറമേ തമിഴ്നാട്, ഉഡുപ്പി എന്നിവിടങ്ങളിലും ഇതൊരു പ്രിയപ്പെട്ട വിഭവമാണ്. Sadya Special Avial
- Cut all vegetables lengthwise into medium-sized pieces.
- Wash and drain the vegetables.
- In a large vessel, add vegetables, turmeric powder, chili powder, salt, 2 tbsp coconut oil, and curry leaves.
- Mix well without breaking the vegetables.
- Add water just enough to cover the vegetables.
- Cover and cook on medium flame until vegetables are tender.
- Do not stir after adding water.
- In a mixer, grind green chilies, cumin seeds, grated coconut, and a few curry leaves into a coarse paste (not too smooth).
- Once vegetables are cooked, add the coconut mixture and mix gently.
- Add thick curd (yogurt) and mix well.
- Add 1 tbsp raw coconut oil and fresh curry leaves.
- Turn off the stove.
- Serve warm with rice or as part of a sadhya.
